Recipes: Carrot, ginger, turmeric and tomato Soup



When you're in the middle of SIBO treatment the dietary limitations suck! Let's get real here for a second, when there's one thing that you're not sick of eating yet that you're allowed to eat that's not measured out, doesn't contain any meat or animal products and doesn't taste like everything else I'm allowed to eat. It's time to make it and eat it. Hoping to come up with other recipes that are SIBO biphasic and low fodmap that are animal free, that I don't have to measure out, that taste great. But until then I can enjoy my carrot, ginger, turmeric and tomato soup. And now you can too!

I chose ingredients that I don't really need to measure out so that I can eat as much of this as I want without feeling hungry when I'm done eating.

So here it is, my carrot and tomato SIBO soup.

Ingredients: (as I said I'm not measuring, sometimes I make loads, other times I make 2 serves, so I guess it depends on how big you want your serves to be and how many you want to make)

Olive oil or coconut oil or any other oil you're allowed/prefer

Carrots (I usually use a kg or 2), washed, not peeled

Tomatoes washed, whole (any variety, I use roma or the gormet type whichever is softer and really ripe, as many as I can fit into a produce bag)

Ginger, I like my soup gingery and a little spicy so I use a big knob of ginger, you can use ground ginger if fresh isn't an option just be mindful to check the label in case there's any added nasties)

Turmeric, (I usually use a piece that's 1/2 the size of my thumb, you can't use too much of this stuff, so go nuts, again fresh is best but ground will do too, just check the label)

Cinnamon (this may not be to your cup of tea, but I love cinnamon so I add a fair amount, either a stick or a tablespoon of ground)

Sweet paprika or smoked paprika (about 2 tablespoons)

Fresh basil (as little or as much as you like)

*Coconut milk optional (1 can, ensure it's just coconut milk and doesn't have any added fillers)

Filtered water.

Method:

Peheat your oven to 175C.

Add your carrots (whole) to an ovenproof dish, drizzle with oil, add your ginger, tumeric, cinnamon and paprika, pour enough water over the carrots to wash the spices into the dish and half cover your carrots. Place the dish in the oven and roast until the carrots are soft and the spices have caramelised a little. Add salt if you like.

In a pot cook your rinsed tomatoes, drizzled with oil, sprinkled with herbs and half filled with water on medium until soft and the skins have seperated. Add salt if you like.

In a food processor process the carrots and tomatoes with their juices in batches and transfer to a large soup pot. Stir the can of coconut milk through your soup and enjoy.

Easy, safe, cheap and delicious!
